BUSH'S® Mini Turkey Sloppy Joes

INGREDIENTS (Nutrition)

  • 1 tablespoon extra virgin olive oil
  • 1 cup diced onions
  • 1 tablespoon minced garlic
  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 1/2 cup tomato paste
  • 2 pounds lean ground turkey
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup chopped canned tomatoes with juice
  • 1 (16 ounce) can BUSH'S® Pinto Beans, drained and rinsed
  • 8 mini whole wheat buns
  • 1/4 cup chopped scallions

DIRECTIONS

  1. Heat the olive oil in a large saute pan over medium heat. Add the onions and garlic; cook until it starts to turn golden brown. Add the chili powder and paprika; cook for 30 seconds. Add tomato paste, ground turkey, salt and pepper. Cook for 4 to 5 minutes until the meat is partially cooked. Add the chopped tomatoes, and beans; bring to a simmer. Let simmer for 10 minutes. Adjust the seasoning with salt and pepper.
  2. To serve: toast mini whole wheat buns, top with Sloppy Joe mix. Sprinkle with scallions.
