INGREDIENTS
1 (10 ounce) package fresh spinach, torn
1 (11 ounce) can mandarin oranges, drained
10 cherry tomatoes, halved
1 cup sliced fresh mushrooms
DRESSING:
1/3 cup sugar
3 tablespoons cider vinegar
1 tablespoon honey
1/2 teaspoon dried minced onion
1/2 teaspoon celery seed
1/2 teaspoon ground mustard
1/2 teaspoon paprika
1/2 teaspoon lemon juice
1/2 cup vegetable oil
1 (2.8 ounce) package French-fried onions

DIRECTIONS
In a large salad bowl, toss spinach, oranges, tomatoes and mushrooms; set aside. In a microwave-safe bowl, combine first eight dressing ingredients.
Microwave on high for 1 to 1-1/2 minutes. Stir until sugar is dissolved. Whisk in oil. Drizzle over salad and toss to coat. Sprinkle with onions. Serve immediately.

I'm not sure about the ingredients in the salad (not a fan of tomato and orange together) but with the tomatoes omitted, this is a great recipe. The dressing is fantastic!

The dressing is delicious! I used the dressing on a salad of spinach,mandarin oranges, thinly sliced purple onion, and walnuts. It was a very good combination and my whole family enjoyed it- 12year old down to 4 year old!

I am rating this salad based on the dressing only. I wanted something to put on a very simple salad of spinach, mandarin oranges and sunflower seeds, and this recipe was perfect!!! I wouldn't change a thing.
