Authentic Pan!: This inexpensive, but authentic, Paella pan works very well on a kitchen range. It heats up quickly and is fairly easy to clean. I centered it over the largest burner on my stove, because it isn't large enough to fit over two burners safely. The next size up would fit over two burners, but pan size is directly related to serving size with Paella pans and this 15 inch pan serves four to six. There are lots of more expensive pans, but this one does the trick! Please note that to make authentic Paella you don't want a nonstick pan or one with a cover!!! Two rules for Paella are--don't stir the rice and don't cover the pan (except with paper towels when you are "finishing" the rice.)
